miata is a proven winner, just go to an autocross and you'll see what im talking about. Huge potential to be fast cars and very tossable.
mr2 - pretty much any of the 3 generations are great track cars. mk2s have great power and looks, mk1s are like go carts, and mk3s are just a little heavier go karts. all have great balance being MR and a large aftermarket.
e30 - i have a sweet spot for e30's...really great car. I hope to have one of my own to play with. the M is very balanced w/ the high revving 4cyl
well, a track car is something that is going to require attention and little bit of money to maintain (not modifiy, just to be able to race). i'm looking to get a Miata for the ease of maintainence. (i'm not trying to be biased). i would look for a car that has a very big aftermarket for track use, not just going fast. i know that the miata has a lot of that, the MR2 and the E30 should also. i know that the E30 has it's own class in NASA, and that usually produces an aftermarket and knowledge base for racing them reliably. even tho the MR2 doesn't have a class, it does have a track car following. it also shares the engines with the corolla that everyone and their mom likes to drift with. Honda's make great track cars also with a huge aftermarket. knotch-back AKA Foxbody mustangs are great too.

hondas are easy and cheap to work on. Parts and support for them are all over the place. rx7 would be cool, but i think you gotta get a good grasp on the whole rotary thing and knowing how to maintain it and all.
you look into any subarus? like 2.5rs or something?
I don't want to belabor the point too much, maybe just build on what Lucas said. There are many great "track cars" but I think you need to find something that has a racing class. So it comes down to more of the driver and not the drivers back pocket. Here is all the NASA series.
